Item Dinámica Computacional de Fluidos Aplicada a Vitrinas Refrigeradas Colombia, 2019, DESAFIOS EN INGENIERÍA: INVESTIGACIÓN APLICADANATALI LOPEZ MEJIA; HUGO LOBATON GARCIAEl modelado de dinámica de fluidos computacional ha sido utilizado como una herramienta prometedora para mejorar la eficiencia de la refrigeración en términos de la reducción de la heterogeneidad del flujo del aire y de los perfiles de temperatura dentro de las vitrinas y en el producto, resultando en un ahorro de energía, manteniéndose la temperatura en el valor requerido con el menor gasto posible. In Colombia, pineapple cultivation is registered mainly in three departments, one of them is Santander, where the municipality of Lebrija is one of the municipalities with the highest production. Despite this, there is no gastronomic evidence of its use (written, film or sound) in their culinary customs. The objective of this research was to identify pineapple-based recipes and using cutting-edge techniques such as deconstruction to evaluate the effect of their implementation.
