Abstract
Introduction. In Colombia, pineapple cultivation is registered mainly in three departments, one of them is Santander, where the
municipality of Lebrija is one of the municipalities with the highest production. Despite this, there is no gastronomic evidence of
its use (written, film or sound) in their culinary customs. The objective of this research was to identify pineapple-based recipes
and using cutting-edge techniques such as deconstruction to evaluate the effect of their implementation.

Introducción. En Colombia, el cultivo de piña se registra principalmente en tres departamentos, uno de ellos es Santander, donde
el municipio de Lebrija es uno de los municipios con mayor producción. A pesar de esto, no se encuentra evidencia gastronómica
de su uso (escrita, fílmica o sonora) en sus costumbres culinarias. El objetivo de esta investigación fue identificar recetas a base
de piña y mediante técnicas de vanguardia como la deconstrucción evaluar el efecto de su implementación
