In Colombia, pineapple cultivation is registered mainly in three departments, one of them is Santander, where the municipality of Lebrija is one of the municipalities with the highest production. Despite this, there is no gastronomic evidence of its use (written, film or sound) in their culinary customs. The objective of this research was to identify pineapple-based recipes and using cutting-edge techniques such as deconstruction to evaluate the effect of their implementation.
