    This project breaks down the execution, analysis, realization, installation and design of an automatic heavy cream and mozzarella cheese slicing machine that is in charge of improving and automating, which develops the mechanical, electronic and control design. Emphasis is placed on the selection of equipment that make the process efficient and that together with the mechanical design fully perform the mentioned process, elements implemented and selected from a rigorous and detailed analysis so that these sensors and actuators are based on requirements and fundamentals of quality from the analysis of industrial instrumentation, ensuring that they are suitable for this kind of implementation and that provide an integral machine that meets the needs of the distributor AWE S.A.S. The functional project of the machine was completely carried out leading to the correct practice of the theory presented in this project, making a functional heavy cream and mozzarella cheese slicing machine applied to the food industry and that executes the process automatically, ensuring the safety and integrity of the operator and the equipment of the machine.
