    Análisis comparativo físico y sensorial de las hogazas de masas madre con adición de tubérculos colombianos para panadería artesanal

    In artisanal baking, sourdough is recognized for its quality and authenticity; however, the use of native Colombian tubers remains largely unexplored. This study compares the physical and sensory properties of sourdough loaves made with yam and arracacha to evaluate their potential in artisanal baking. The results, supported by sensory acceptability tests, demonstrate the product's feasibility and highlight the value of using local resources to diversify bread offerings, enhance nutritional benefits, and promote sustainable food systems.
