The production of organic waste in the world has a high negative impact that generates greenhouse gas emissions and loss or waste of food in the supply chain. By proposing a process for shredding organic waste, it is intended that the community of the Restrepo market place carry out an adequate separation of waste from the source to be processed through shredding and, as a result, obtaining the raw material for composting. A direct observation is carried out together with the data collection where the amount and type of waste generated is analyzed to determine the most efficient system in the collection of organic waste, reducing internal problems, contamination, bad odors and poor final disposal. A characterization of the Restrepo market place is used through a questionnaire of the type closed to merchants where general aspects of organic waste and the disposal they make on them are addressed, after that an awareness was made with a group of merchants. Using the data obtained and the amount of waste that is generated on average per day, a machine is chosen that meets the specific characteristics for the crushing process and finally the economic viability of the implementation of the proposed system is realized. With these applied methods it is intended to find an efficient and correct process to mitigate pollution and thus provide an adequate disposal of organic waste.
