    The present work refers to the issue of the identification of low foods, the tool of good food handling practices, due to the importance that it is for the human being to have clean, healthy foods, as well as free of any disease or impurity . Good Manufacturing Practices (BPM) are a set of tools that are implemented in different sectors, in which quality and safety standards must be implemented. The market places are the main food processing center not only in the city of Bogotá but also throughout the Colombian territory by history, culture and therefore it is so important to ensure that the quality of the products is in optimal health conditions and hygiene The research carried out in the good handling practices tool infers that it is specified as mandatory measures in Colombia; They seek to avoid the eventuality of physical, chemical and biological risks during the process of transformation, processing, storage and distribution of these. For the human being there is no awareness that food is generating gastric diseases in humanity and sometimes it is due to the existence of microorganisms within them that due to the bad habits and handling that the child transmitted by the foods we consume
