    Estudio de prefactibilidad para la producción de cupcakes saludables: bajo el principio de producción limpia

    In the present work, a pre-feasibility study is carried out for the production of healthy cupcakes: under the principle of clean production, which was achieved by carrying out a bibliographic review and a cultural, social and environmental analysis, which by putting them in context allowed to establish how beneficial It is the application of cleaner production in this process and that is required to consider that a cupcakes is healthy and can be consumed primarily by people with special health conditions. In addition, a diagram of the cupcakes production process and a SWOT matrix was made in order to identify potential consumers, opportunities and problems of incorporating clean production in the production of healthy cupcakes, through which the following were highlighted. aspects; Regarding the positive side, the conservation and reduction of the environmental impact in operations, the reduction in the value of public services, the product turns out to be innovative and attractive for all ages, there has been an increase in the fit and consumption trend healthy. As for the negative side, there are people who have no knowledge about what is a healthy diet, also during this production process non-organic waste is generated and there is a high competition for substitute products.
