    Propuesta de un modelo de gestión administrativa en un establecimiento gastronómico tipo bar - caso bar “2 quince”

    The degree project consists of structuring an administrative management model in the "2 Quince" bar, where a diagnosis of the elements of the administrative management is identified and made, proposing tools and processes for the improvement of the establishment. A theoretical framework is built in order to have a solid base on which to establish the guidelines that in general and theoretical terms the bar "2 Quince" must comply with for its administrative processes, as well as for the model to be adaptable to other organizations of the same economic sector. The theoretical framework allows to identify certain macro and micro variables of the administrative process, with this information it is decided to make a checklist where all the relevant elements of the administrative management are shown. An interview with the bar administrator is carried out to identify the existing elements and about the lack of depth in the management and implementation. The identification allows the diagnosis on the state of the application of processes, the result that was obtained with these research instruments allowed to perform the general and specific analysis, in the first case, by means of a general tabulation and for the specific case with the interpretation of the graph and the corresponding table, these results are finally used as inputs for the identification of the bar's strengths and opportunities.
