    Análisis comparativo entre la cadena de valor agroecológica y tradicional asociada a los sistemas de producción de panela en Pacho Cundinamarca

    In Colombia, various tactics have been developed for the production of panela from sugar cane, two of them are traditional and sustainable production, where their most important difference is care for the environment. Now, the subject of the investigation is the comparison between the traditional value chain and the agroecological value chain in the production of panela in Pacho Cundinamarca, this in order to identify the benefits of agroecological production. For this, the agroecological producer "Pacho Panela" was visited, where It was found that the management that is given to the production processes is very rigorous to reduce the negative effects on the environment. Additionally, it was found that this type of producers manage a minimum level of waste, since everything can be reused and they can be created. variety of products derived from panela. When analyzing in detail each physical space and way of working in Pacho Panela, the optimization and management of resources used in each phase of the raw material transformation process stands out as the main factor, which are highly structured with the purpose of having adequate conservation and easy handling. However, these criteria are not enough to create a broad demand on the market; over time, the presentations of the products have been elaborated and modified with the perspective of creating one that is attractive, organic and economical for consumers.
